    Pure comfort food, this Gluten Free Banana Bread is perfectly moist and loaded with banana flavor.

    This is such an easy recipe, you can whip this banana bread in no time. It started with ripe bananas…. and  the essential ingredients are almond flour, gluten free flour blend,  coconut milk andcoconut oil.

    Almond flour is a staple in my pantry, a gluten-free baking alternative to standard wheat flour.

    Are you familiar with Buckwheat? Buckwheat is a fruit seed related to rhubarb. Energizing and nutritious, buckwheat is a superfood.

    Buckwheat, on the other hand, ranks low on the glycemic scale.

    Hulled buckwheat kernels (called groats) are pale tan-to-green, while the roasted buckwheat groats known as kasha—a staple food in Eastern Europe—are dark brown with a nutty flavor.

    Buckwheat has more protein than rice, wheat, millet or corn.

    Like all grains, buckwheat should be rinsed thoroughly under running water before cooking, and any dirt or debris should be removed. After rinsing, add one part buckwheat to two parts boiling water or broth. After the liquid has returned to a boil, turn down the heat, cover and simmer for about 30 minutes.
